JOB TITLE: Sous Chef

DIVISION: Food and Beverage

REPORTS TO: Kitchen Chef

LOCATION: Honeycomb Grill Restaurant

CLASSIFICATION: Full-Time / Seasonal / Hourly

POSITION:

Solitude is seeking out a creative and motivated sous chef to join our talented food and beverage team. We are looking for someone who is interested in working up in the charming and sublime Utah Cottonwood Canyon mountains. The sous chef is responsible for providing supportive leadership to the kitchen and staff throughout food service. The sous chef will assist the head chef with all food production for day operations and monitor kitchen activities ensuring quality food presentation. This position will also require taking on additional responsibilities in the head chef's absence to ensure that kitchen has proper direction. SPECIFIC JOB REQUIREMENTS:
  • Five years of managing a kitchen operation of ten or more cooks and experience in high-quality, fine dining is preferred
  • Menu design skills are recommended
  • Certification through the Health Department in the Serve Safe Program is required
  • Experience in projecting and maintaining food and labor costs
  • Experience with international foods, American regional cuisines, and special diets
  • Experience managing a diverse crew, many with little or no kitchen experience
  • Skilled in guest interactions, accuracy, and speed in handling emergency situations and providing solutions
  • Capable of standing for extended periods of time and lifting up to 30 lbs.
  • Willing to work flexible work schedules that may include holidays and weekends


JOB DUTIES AND RESPONSIBILITIES:
  • Stay knowledgeable of current food trends and develop new menu items
  • Be familiar with international, domestic, and special diet cuisine preparation
  • Operate the kitchen and direct kitchen personnel
  • Maintain consistency of product with great attention to food quality, taste, and presentation
  • Comply with and enforce sanitation regulations and safety standards
  • Ensure that the kitchen operates in a timely way that meets or exceeds Alterra brand standards
